1 to 3 cloves garlic, minced salt and pepper to taste
2 tablespoons finely chopped 1 teaspoon dried parsley flakes
2 tablespoons olive oil 1/4 teaspoon dried oregano (optional)
2 large tomatoes or 10- plum 1/8 teaspoon dried thyme (optional)
Tomatoes, coarsely chopped
2 tablespoons chopped fresh Basil
Sauté garlic and onion in oil in a large skillet over medium-high heat, stirring constantly,
Until lightly browned. Add tomato, cook over low heat 10 minutes, stirring occasionally.
Stir in basil, salt and pepper to taste, and, if desired, parsley, oregano, and thyme.
. Yield: 1 1/2 cups.
