Across the world you will find many different version of Pizza as well as Pizza Sauces.
Thanks to Wolfgang Puck and chains like CPK you will find many non traditional pizza sauces like BBQ, Thai Peanut or even Hoisin Sauce. These sauces are great and have their place, but today I offer to you some of the basic sauces that you may find in an Italian Pizzeria. Pizza is a genre to itself and deserves the respect of your time.
After all you deserve to experience the freshness and quality of a great sauced and topped Pizza. Here are the basic Pizza Sauces, more on the toppings for Pizza to come in future posts as well as actually baking Pizzas for those who need help. Feel free to comment, it is always appreciated!
Pizza Sauces (Recipes) print version
San Marzano Style Pizza Sauce
Ingredients
1 28 oz can of San Marzano Tomatoes
salt and black pepper to taste
4 fresh basil leaves
Method
Place all ingredients in a blender and pulse blend till smooth, if you enjoy a chunkier sauce blend less. This sauce is wetter than most so don't over top your Pizza, you will notice a cleaner tomato flavor. I use this one for the Classic Pizza Marguerite ( not spelled Margarita)
Basil Oregano Pesto
Follow the link here for the recipe. When using this recipe you need to thin out the Basil Oregano Pesto a bit with Olive Oil so you may brush or spoon on evenly. This sauce may also be used in combination with any of the other sauces as well!. Great for Shrimp and Vegetable Pizzas or as a finishing touch to any of your favorites.
White Pizza Sauce
Ingredients
1 cup Sour Cream
1/2 cup mascarpone cheese
salt and pepper to taste
bit of nutmeg (optional)
Method
Blend the above ingredients till smooth in a blender of food processor. Spread evenly over the Pizza Dough leaving the edges clean. This sauce is great with Homemade Ricotta Cheese, and torn basil leaves. Try the exotic Truffle Oil with Whole Milk mozzarella, Grana Padano
cheese and thin sliced Mushrooms
Fresh Tomato Sauce with Basil
Follow the link here, but instead of tossing it with pasta let it cool and use it to sauce your Pizza. Top it withe you favorite toppings, Whole Milk Mozzarella and fresh grated Grana Padano Cheese, drizzle some Olive Oil on top.
